Creamy Avocado Salad

By now, we should all know the health benefits of avocados, which incidentally are the star player in this dish. Just in case, here is a quick recap of all the reasons why you should jump on board with this miracle fruit:

They are jam packed with a ton of nutrients like Vitamin K, Folate, Vitamin CPotassium, Vitamin B5, Vitamin B6, Vitamin 

They contain more potassium than bananas

They are loaded with heart healthy monounsaturated fatty acids

They are very high in fibre

They can can lower cholesterol and triglyceride levels

They are considered to be an aphrodisiac (ooh lala)

The ancient Aztecs called the avocado ahuacuatl, or “testicle tree” due to it’s shape. The catholic priests in spain actually found the shape of the fruit so pornographic that they banned avocados entirely. While they do possess immune boosting properties that can heighten energy levels, it’s the creamy mouth feel that truly makes this a rather sinful fruit.

serves 8- 10

1 Red onion (finely diced)
3 Red vine tomatoes (seeded and finely diced)
1 tbsp Sambal Oelek (Thai red chili paste, available in most Asian markets)
1/4 cup Cilantro (finely chopped)
4 tbsp Extra virgin olive oil
1/4 cup Lemon juice
5 Haas avocados (peeled, seeded and large diced)
Salt and pepper (to taste)
Mix onions, tomatoes, Sambal Oelek, cilantro, oil and lemon juice in a large bowl.
Peel, seed and dice avocados and add to the bowl.
Gently (with a rubber spatula) mix the ingredients together, season and taste.
Best served immediately with tortilla chips.
