Hummus is super easy to make, a great way to get some extra protein into your diet and it’s also super delicious. You will be surprised with how good this hummus is! The great thing about making hummus at home, is playing with new flavours. You can add caramelized onions, roasted garlic, lemon, chili pepper, the list goes on. This is my favourite “master” recipe for a basic hummus, I hope you enjoy it as well!
Prep time 10 mins / makes 3 cups
3 garlic cloves, roughly chopped
2 cups canned chickpeas, well drained & rinsed, liquid reserved
1/2 cup tahini sesame paste, well stirred
Salt & pepper to taste
Juice of two large lemons
2 tbsp liquid from the chickpeas
1 tbsp ground cumin
- Combine tahini and lemon juice in the bowl of a food processor and blend until light and creamy (2 mins)scraping down the sides of the bowl every so often.
- Add 1/2 the chickpeas to the mix and process for 2 minutes. Scrape down the bowl, add the rest of the chickpeas, lemon juice, cumin, salt & pepper. Process for another 2 minutes. The hummus will be very thick and smooth.
- To correct the consistency, add one tablespoon at a time of chickpea liquid to the processor while on. When the desired consistency has been reached, taste for seasoning.
- Store the hummus in airtight containers with a drizzle of olive oil on the top. Hummus can be refrigerated for up to one week.
