Who doesn’t love a good fruit cup? Especially when you get one with lots of maraschino cherries floating in wonderfully sweet elixir. The problem is that it gets expensive always buying those darn plastic cups, and you cant control the ingredients, sugar content or fruit juice used to prepare them! Here is the solution, make the cups ahead of time in reusable plastic containers, choose your fruit, freeze them, and voila. Take them out in the morning and by lunch time they will be ready to eat.
Prep time 20 mins / makes 20 fruit cups (250 ml)
2 cans crushed pineapple, undrained
4 cans mandarin orange segments, undrained
2 jars maraschino cherries, drained
1 can pears, cut into small cubes, liquid reserved
3 cups green & red grapes, halved
3 cups frozen mixed berries
1/2 cup fresh lemon juice
1 bottle pear nectar
- Combine all the fruits and their juices in a large bowl, add lemon juice and pear nectar.
- Ladle mixture into 1 cup containers, seal tightly and freeze.
