Blueberry Almond Oatmeal Cookies
These are hands-down the best oatmeal cookies I have EVER tasted. Fresh blueberries and crunchy almonds pair magically for a textural overload in these scrumptious, almost guilt-free treat!

  1. Preheat oven to 350 degrees Fahrenheit. Line two baking sheets with parchment paper.
  2. Cream together the butter and sugar until light and fluffy with beaters or in a stand mixer with the paddle attachment.
  3. Add in the eggs, one at a time. Beat on high until very pale.
  4. Add almond extract, beat to combine.
  5. In a separate bowl, whisk together the flour, ground almonds, flax, baking powder, baking soda and salt.
  6. Mix the dry ingredients into the butter mixture on low until just combined. DO NOT OVER-MIX!
  7. Gently fold in the oats, almonds and blueberries until well incorporated.
  8. Using an #40 ice cream scoop or a soup-spoon, portion out the cookies and drop them on to the lined baking sheets approximately 2 inches apart.
  9. Bake on the centre rack in the oven for 10-13 minutes or until just starting to brown. Let cook for 5 minutes on baking sheets before transferring cookies to wire racks to cool completely.
  10. Repeat with the remaining batter.
