Dark Chocolate Chunk Banana Bread

I used Swiss Delice 72% Dark Chocolate
Preheat oven to 350° F. Line a loaf pan with parchment paper or grease it liberally.
Cream together the butter and sugar until light and fluffy.
Beat in the eggs, one at a time until completely combined. Add vanilla and bananas. Beat the bananas into the butter mixture until completely combined.
Sift the flour, baking soda and salt into the wet mixture and tip in the chocolate chunks. Mix by hand until just combined. Do not overmix.
Pour the batter into prepared loaf pan, smooth out the top.
Bake for 1 hour, or until a skewer inserted comes out somewhat clean.
Let cool before removing from pan and letting cool completely on a wire rack.
