  1. Bring 2 cups water to the boil in a medium sized pot, add rinsed Jasmin rice, stir once and bring back to the boil.
  2. Turn heat to lowest setting, cover the pot and cook for 8-10 minutes until no water is left. Turn off the heat and let the rice stand, covered, until ready to use.
  3. Heat coconut oil in a large skillet or wok over high heat until oil is almost smoking hot.
  4. Carefully toss the broccoli into the oil and give a quick stir to coat. Let the broccoli fry for 2-3 minutes until starting to brown.
  5. Add all the rest of the veggies to the pan, followed by the ginger, garlic and shallots. Stir-fry the vegetables for 5-7 minutes over high heat until slightly softened and very fragrant.
  6. Pour in the sesame oil, soy and hoisin sauce, toss the vegetables around in the sauce and cook for another 2 minutes to thicken the sauce. Season to taste.
  7. Fluff Jasmin rice with a fork.
  8. Serve the rice with the stir-fry and a side of sliced avocado topped with a generous sprinkling of sesame seeds.
