Mango Lemon Overnight Oats

I am a big fan of meal prep, whether it’s for breakfast, lunch or dinner. I will take one day a week and have some fun in the kitchen, creating recipes and testing out ones I find on my favourite food blogs. My fridge is always full of yummy things that are super quick to reheat or grab on the go. This is one of my favourite breakfasts, overnight oats. I make these with lemon juice, fresh lemon zest, lemon yoghurt and I also use rolled oats instead of old fashioned because I like the texture better. For and added treat, dollop a scoop of your favourite lemon curd into the jar before serving, this will add an extra kick and some sinful sweetness.

Instructions
  1. Stir together the oats, almond milk, yoghurt, lemon zest, juice and seeds until well combined.
  2. Cover and refrigerate for 4 hours until thickened.
  3. Layer the oat mixture with fresh mango into mason jars or glasses. Cover and refrigerate overnight.
  4. Serve topped with cereal and hemp hearts.
  5. Enjoy!
