Nordic Shrimp Cucumber Bites
Light, fresh, airy and delicious. These little canapes are the perfect choice to serve before a large meal, at a tea party or as part of cocktail menu, for a touch of elegance and refinement. Nordic shrimp, or crevette de Matane, are tiny, wild-caught shrimp that have a mildly sweet flavor that are found in the coldest parts of the Atlantic and Pacific oceans. You can purchase them cooked-frozen from most super-markets or fish markets. These cute shrimps are delicious in salads, soups and appetizers because of their pale pink color and appealing size. In this recipe, the shrimp are tossed in a creamy Greek yoghurt sauce, spiked with lemon zest, dill and served in little cucumber cups for an incredible fresh tasting hors d’oeuvre. You will just love the way they look on your table or passed around on a beautiful serving tray at your next dinner party!

  1. Using a melon baller, scoop out the centers of the cucumbers almost all the way down to the base. Be sure to leave some flesh at the base and round the skin so the cucumber cup stays firm. You can discard the cucumber centers or keep them for a salad.
  2. In a small mixing bowl, combine the shrimp, yogurt, lemon, lemon juice, dill, salt & pepper. Mix well.
  3. Divide the shrimp amongst the cucumber cups and serve chilled with a sprig of fresh dill as garnish.
