Salted Chocolate Chip Peanut Butter Cookies

Midnight cravings be damned, I couldn’t stop myself from making these amazing little cookies last night. After spending my Sunday scrubbing every inch of my neglected condo and then collapsing onto my couch to binge watch New Girl, I suddenly remembered that I needed to eat something. The problem was that it was already 11:30 pm and I didn’t feel like cooking a meal, nor was I in the mood for a full meal, rather longing for something sweet and decadent.

I scrounged around my pantry for some ideas and two beautiful products stood out from my chaotic pantry, an almost empty jar of sugar-free creamy peanut butter and a huge bag of semi-sweet chocolate chips. It was magic, love at first sight! It took about five minutes to whip up a delicious batch of these cookies and while I scooped them out with the help of my trusty meatball scoop, I thought to myself… “Self,” I said, “Don’t you think a little salt would be perfection on these decadent cookies?” I agreed with myself quickly and reached for my fancy Mexican salt Flor de Sar de Celestun and delicately sprinkled a few flakes onto each cookie.

Within fifteen minutes, the smell of comfort and hugs wafted out from my oven and filled my condo. Moments later my fiance came home from a night out and joyously exclaimed “Oooooh cookies!”.

Yes indeed my love, oooooh cookies. Ooooooh cookies.

Instructions
  1. Preheat oven to 325 F. Line a cookie sheet with parchment paper.
  2. Combine butter, peanut butter and sugars in a mixing bowl. Beat until light and fluffy.
  3. Add egg and vanilla, beat to combine.
  4. Using a wooden spoon, stir in the flour, baking powder and salt. Mix until combined.
  5. Stir in the chocolate chips.
  6. Using a small ice cream scoop or meat-baller, scoop out the cookie dough anf place the balls 2 inches apart on the cookie sheet.
  7. Gently press the cookies down with a fork and sprinkle with a little bit of Fleur de Sel.
  8. Bake fore 15 minutes. Cool completely on a rack.
