Smoky Bacon Cauliflower Buffalo Bites

I am a YouTube fiend in the morning. I watch all sorts of stuff while getting ready for work but of course I have my favourites. Jenna Marbles and Julien Solomita are two of my all-time favourite YouTubers. They are so dang funny and really crack me up in the mornings!

While binge watching the comedic duo, they made this recipe for cauliflower Buffalo wings and my mouth was instantly jealous. I watched them with envy as they devoured the entire tray of bright orange morsels, mouth salivating and I almost died. I had to make them.

In their recipe they used vegan alternatives, which is great but I am not vegan and I had so much stuff in my fridge already, I didn’t want to go and get more. I had leftover buttermilk and I had a smoky bacon hot sauce made by President’s Choice that I was dying to try. The result was magical, spicy and delicious.

Give these a try and you will not believe how much they taste like buffalo chicken. The texture is so similar with zero guilt! The rough calories for half the recipe is around 220 so eat the whole thing if you want!

  1. Preheat oven to 475 degrees. Line a baking sheet with parchment paper and spray the paper lightly with cooking spray.
  2. Whisk the flour and spices together until combined. Pour in the buttermilk and stir to combine. Don’t over-mix! If the batter is too thick add ice cold water, one tablespoon at a time until the batter is thick enough to coat the cauliflower without being clumpy or dripping off.
  3. Coat each piece of cauliflower in the batter and place on the baking tray spaced apart. Don’t overlap the cauliflower or it will come out soggy and unevenly cooked.
  4. Bake the bites in the oven for 30 minutes, flipping them halfway through. You want them to be golden and crispy but not burnt. Note that the bites won’t ever be as crispy as the deep fried version so you will have to make that tiny sacrifice!
  5. Meanwhile, whisk the butter and the hot sauce together in a large bowl.
  6. When the bites are cooked, toss them delicately with the sauce and pour them back on to the baking tray. Spread them out evenly into one single layer, not overlapping.
  7. Return them to the oven for 25 minutes, flipping them halfway through.
  8. Serve these spicy babies with ranch dip or blue cheese dip and a side of celery or cucumbers if you aren’t a huge fan of celery (like me) and watch them disappear.
