Stuffing Flavoured Rice

This is one of my new faves! We are only two for Thanksgiving this year so I thought cooking a whole turkey would be a bit much. Instead I roasted a whole whack of delicious veggies and a crispy whole chicken. There was one crucial dish missing from my Thanksgiving table though, my mom’s stuffing. It is by far, the most amazing stuffing ever and I couldn’t have a meal like this without having the house smelling like the stuffing I so love.

Unfortunately I didn’t have a stitch of bread in the house! I did have tons and tons of rice so this amazing dish was born. Loaded with celery, onions and herb, this stuffing flavoured rice knocked it out of the park and my house smelled like heaven in minutes!

Instructions
  1. Cook bacon in 2 tsp butter over medium-high heat until crispy. Remove bacon with slotted spoon and reserve.
  2. Add onions, celery, spices and garlic to butter and bacon fat. Sweat vegetables over medium heat until onions are translucent. 
  3. Pour in rice and cook for 2-3 minutes.
  4. Pour in chicken stock, bring to the boil. Reduce heat to lowest setting, cover and cook for 10 minutes until no visible liquid is left. 
  5. Remove from heat and let rice stand, covered for 10 minutes. 
  6. Fluff with a fork and add 2 tsp butter.
  7. Serve hot.
