If you are anything like me, then you will understand when I say that pizza might just be the perfect food. This doughy vessel that lifts your favourite flavours to your lips while oozing a molten lava of cheese. This food fit for anytime of day, yes ANYtime. This delicious meal to be shared, miniaturized, eaten as a meal, snack or shame eaten alone in bed, watching ridiculous movies and using you sheets as one big napkin. Pizza is what I want… most of the time. This version is inspired by garlic bread, and anything Florentine while sneakily cheating a thin crust.
for one 12″ pizza
1 extra large tortilla (white or whole wheat)
2 cloves of garlic (minced)
1 tbsp butter
1 tbsp olive oil
2 cups baby spinach (washed and dried)
1 Roma tomato (seeded and small diced)
1 tsp fresh lemon juice
1 tsp dry oregano
1 tsp garlic powder
1/4 tsp chilli flakes (optional)
salt & pepper to taste
1 cup grated three cheese blend (parmesan, provolone & mozzarella)
2 tbsp fresh basil (chopped)
1 tbsp sesame seeds
Preheat oven to 450 degrees.
In a non stick frying pan over high heat, sauté garlic in butter and olive oil until slightly golden. Do not burn the garlic, it will stink up your house.
Add to the pan in one shot the spinach and cook until wilted and all liquid evaporates.
Add tomato, lemon, oregano, garlic powder, chilli flakes and season to taste. Sauté mixture for 5 minutes.
Let cool slightly.
Lay tortilla down on a pizza tray and evenly top with spinach mixture. Sprinkle the cheese over the spinach, top with basil and sesame seeds.
Bake pizza in the centre oven slot for 10 – 15 minutes or until cheese is melted and edges begin to brown.
Remove from heat, cut and serve piping hot.
