Oven Fries with Chimichurri Mayo

serves 4


4 russet potatoes, peeled & cut into fries

3 tbsp sugar

2 tbsp olive oil

Salt & pepper

1 cup Italian flat leaf parsley

3 tbsp fresh oregano

2 cloves garlic

2 green onions

1 tbsp red wine vinegar

1 cup mayo

salt & pepper


Preheat oven to 400 F. Line a baking sheet with parchment paper.

Soak fries in cold water with sugar for 1 hour.

Drain fries and dry completely before tossing with oil. Season with salt & pepper.

Lay fries on baking sheet in one layer, not overlapping.

Bake for 45 minutes, turning once halfway through.

Meanwhile, blend parsley, oregano, garlic, onions, vinegar and mayo until a smooth purée  is made. Season to taste.

Serve fries hot with dipping sauce, but make sure everyone is eating because your breath is going to kill.
