“Mango takes the spotlight in this interesting salad, for good reason. This diva is the national fruit of India, Pakistan and the Philippines as well as being the national tree of Bangladesh.
Because of my Indian heritage and Italian upbringing, it seemed only natural to pair the two most influential fruits of each respective culture in the hopes of a favourable result. The warmth of the spices, the fresh herbs and the sweetness of the onion balances extremely well with their juicy counterparts.
Nutritionally, mangoes are a powerhouse for folate and vitamin C which fuels your skin, your mood and your immune system among other things.”
1/4 cup extra virgin olive oil
Juice of 1/2 lemon
1/4 cup mango juice (or 2 tbsp orange juice)
pinch of nutmeg
pinch of clove
1 tsp Sriracha chili sauce
salt and freshly ground pepper
1 large, ripe mango (peeled and cut into medium dice)
1/4 cup red onion (small dice)
1 pint ripe cherry tomatoes (halved)
2 tbsp fresh mint (rough chop)
2 tbsp fresh coriander (rough chop)
1 small red chili (seeded, minced) – optional
Using a whisk, combine all of the vinaigrette ingredients in a large mixing bowl.
Gently fold the salad items with vinaigrette and let rest until ready to serve.
Serve room temperature for best flavour.
